Our Process |
||||||||||||||||||||||||
In
the Vineyard: This year's harvest
is finally finished! We processed grapes until the very
end of October, and almost all varietals were picked at least a week
later than usual. With longer hang times, our fruit is even more lush
than usual so our 2008 vintages should be awesome. Imagine savoring a
perfectly ripened fruit from your local farmer's market. That's what
our
winemakers are enjoying. You will be able to taste the difference at
our spring Barrel Tasting and Futures Sale. In
the Winery: Chris and D.J. are tired but very happy. They
processed over 100 tons of
grapes and produced over 6000
cases of wine. No wonder our winemakers are in good shape
physically: each of them lifts over 100,000 pounds in less than two
months! Both are proud of this year's production, the largest
in Pearmund Cellars' history. Since we do not like being sold out of
your favorite varietals, we increased the number of cases to keep up
with your consumption. |
