Our Products

For a romantic Halloween, try grabbing a blanket, your favorite Pearmund Cellars wine, a candle or flashlight, and a ghost story CD (with player, of course). Go to your favorite spooky location -- a creaky, old mansion would be great. Spread out your blanket, put in the CD, cuddle close, and sip your wine for a real spooky, romantic evening!

For a festive Halloween at home, try mulling your favorite red wine into a Banshee and adding Halloween treats. It's great fun to host an impromptu party by inviting neighbors you meet while trick-or-treating with your children.

Or, come to our Cabernet Frankenstein Spooktacular at Pearmund Cellars. Don your most frightening get-up and join us for a positively ghoulish vertical tasting of Cab Franc. The Mad Scientist Vintners of Pearmund Cellars are busy putting the finishing touches on the reanimation of our 2002 and 2003 vintages. Sample them with some tasty treats, if you dare. All tastings on Halloween weekend will be $5, and our Cabernet Franc wine will be on sale for $13 per bottle.

Our Process

If you stopped by the winery this month, you may have seen large quantities of luscious grapes being processed. For white wines, the juice was drained via pressing -- the immediate separation of juice from skins, seeds, and solids -- to eliminate unwanted color and tannins. Based on the style of wine planned, this white juice was placed in either oak barrels or stainless tanks. For red wines, the juice was left in contact with skins to gain color, flavor, and tannins. This red juice was put in large vats and periodically punched down to assist maceration and the natural press of gravity.

Next, natural yeasts were added to barrels, tanks, and vats so the grapes' natural sugars could be converted into alcohol and carbon dioxide. The fermenting juice, called "must", stayed at controlled temperatures until the sugar was gone, and dead yeast was either removed or left in to add complexity. The next steps in the process are draining and filtering which may be repeated several times.

This sounds simple, right? For a more detailed view, see the Enology Notes by Virginia Tech's Bruce Zoecklein.

Our People

We are very happy to welcome Sue Raiford back to Pearmund Cellars. As our first Tasting Room Manager, Sue had an incredible memory for not only customer names and faces, but also their favorite wines. Please stop by the winery to see if you can stump Sue's memory and enjoy Viognier O'Clock. If you don't know what that means, you need to visit Pearmund Cellars just before closing.
